Ingredients

10 cups popped popcorn (about 1/2 cup unpopped kernels)

1 cup unsalted butter (2 sticks)

1 cup brown sugar, packed

1/2 cup light corn syrup

1 teaspoon vanilla extract

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup chocolate chips (optional, for drizzling)

Instructions

  1. Prepare the popcorn: Pop your popcorn using your preferred method (air popper, stovetop, or microwave). Once popped, place the popcorn in a large mixing bowl, removing any unpopped kernels.
  2. Make the caramel sauce: In a medium saucepan, melt the butter over medium heat. Add the brown sugar and corn syrup, stirring constantly until it comes to a gentle boil. Let it boil for 4-5 minutes without stirring.
  3. Add vanilla, baking soda, and salt: Remove from heat and stir in the vanilla extract, baking soda, and salt. The mixture will bubble, so be cautious.
  4. Coat the popcorn: Pour the hot caramel sauce over the popcorn and toss gently to coat evenly.
  5. Bake the caramel corn: Preheat the oven to 250°F (120°C). Spread the caramel-coated popcorn in a single layer on a baking sheet. Bake for 45 minutes, stirring every 15 minutes.
