Dirty Rice with Ground Beef is a flavorful, one-pot dish with savory spices, ground beef, and rice. Perfect for busy weeknights, it’s a hearty meal that’s customizable and comforting.

Ingredients

1 lb ground beef

1 cup long-grain white rice

2 cups beef broth (or chicken broth)

1 medium onion, finely chopped

1 bell pepper, finely chopped

2 celery stalks, finely chopped

2 cloves garlic, minced

1/2 teaspoon paprika

1/2 teaspoon dried thyme

1/2 teaspoon dried oregano

1/4 teaspoon cayenne pepper (optional, for heat)

Salt and pepper to taste

1 tablespoon olive oil

1/2 cup green onions, chopped (optional, for garnish)

Instructions

  1. Cook the Ground Beef: Heat olive oil in a large skillet or Dutch oven over medium heat. Add the ground beef, breaking it into small pieces as it cooks. Drain excess fat, and season with salt and pepper.
  2. Cook the Veggies: Add the chopped onion, bell pepper, celery, and garlic to the skillet. Cook for 4-5 minutes, until softened and fragrant.
  3. Add the Rice and Seasonings: Stir in the rice, cooking for 1-2 minutes to toast it slightly. Add paprika, thyme, oregano, cayenne pepper (if using), and salt and pepper to taste. Mix well.
  4. Add the Broth and Simmer: Pour in the beef broth, stirring to combine. Bring to a simmer, then cover and reduce heat to low. Let it cook for 20-25 minutes, until rice is tender and liquid is absorbed. Add more broth or water if necessary to finish cooking the rice.
  5. Garnish and Serve: Once the rice is cooked, fluff it with a fork and sprinkle with chopped green onions (if using). Serve hot and enjoy!
