Ingredients

For the shrimp filling:

1 lb large shrimp, peeled and deveined

8 oz cream cheese, softened

1 tablespoon mayonnaise

2 teaspoons soy sauce

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon black pepper

1 tablespoon fresh chives, chopped (optional, for garnish)

For the garlic toasts:

1 baguette, sliced into 1/2-inch slices

1/4 cup unsalted butter, melted

23 cloves garlic, minced

1 tablespoon fresh parsley, chopped (optional, for garnish)

Instructions

  1. Prepare the Shrimp Filling: In a skillet over medium heat, cook the shrimp for 2-3 minutes per side, until they turn pink and are cooked through. Remove from heat and let them cool slightly. Once cooled, chop the shrimp into small pieces and set aside.
  2. Mix the filling: In a medium bowl, combine the softened cream cheese, mayonnaise, soy sauce, garlic powder, onion powder, and black pepper. Mix until smooth and creamy.
  3. Add the shrimp: Stir in the chopped shrimp until evenly distributed through the cream cheese mixture.
  4. Prepare the Garlic Toasts: Preheat the oven to 375°F (190°C). Lay the baguette slices in a single layer on a baking sheet.
  5. Make the garlic butter: In a small bowl, combine the melted butter, minced garlic, and chopped parsley. Brush the garlic butter mixture generously over the baguette slices.
  6. Toast the bread: Bake the baguette slices in the oven for 8-10 minutes, or until they are golden brown and crispy.
  7. Assemble the Shrimp Rangoon Toasts: Once the garlic toasts are ready, spoon the shrimp cream cheese filling generously onto each toasted slice. For an extra golden, bubbly top, broil the toasts for 2-3 minutes until the filling starts to brown and bubble.
  8. Garnish: Remove from the oven and garnish with fresh chives and extra parsley, if desired.
  9. Serve: Serve the Shrimp Rangoon Garlic Toasts warm with your favorite dipping sauces like sweet chili sauce, soy sauce, or a spicy mayo.

Notes

Add a little bit of cream cheese with herbs to the filling for extra flavor.

Mix in some chopped green onions or diced red bell pepper for a pop of color and flavor.

Make them extra cheesy by adding some shredded mozzarella or Parmesan on top before broiling.

Substitute shrimp with crab meat or lobster for a luxurious twist.
