Delicious Baked Churro Bites are a healthier, baked version of the classic fried churro! These mini churros are light, fluffy, and coated in a warm cinnamon-sugar mix. Ingredients

For the Churro Bites:

1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

1/2 cup water

1/4 cup unsalted butter

1 tablespoon granulated sugar

1 teaspoon vanilla extract

1 large egg

For the Cinnamon Sugar Coating:

1/2 cup granulated sugar

1 tablespoon ground cinnamon

Instructions

  1. Make the Churro Bites: Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper. In a medium saucepan, combine the water, butter, and 1 tablespoon sugar. Heat over medium heat until the butter has melted and the mixture comes to a boil. Remove the saucepan from heat and stir in the flour, baking powder, and salt until a dough forms. Let the dough cool slightly for 5 minutes, then stir in the egg and vanilla extract until fully incorporated and smooth. Using a small spoon or your hands, shape the dough into bite-sized balls and place them on the prepared baking sheet, leaving space between each bite. Bake for 12-15 minutes, or until the churro bites are golden brown and slightly puffed.
  2. Make the Cinnamon Sugar Coating: While the churro bites are baking, mix the sugar and cinnamon together in a small bowl. Once the churro bites are done, remove them from the oven and let them cool for a few minutes. While they’re still warm, roll each churro bite in the cinnamon-sugar mixture to coat completely.
