A light, refreshing take on the classic Caesar—crisp cucumber ribbons, crunchy croutons, and creamy Caesar dressing come together for a cool, easy-to-make side or snack.

Ingredients

2 large English cucumbers (about 1214 oz total)

½ cup plain Greek yogurt or mayonnaise

2 tablespoons finely grated Parmesan cheese

1 tablespoon fresh lemon juice

1 teaspoon Dijon mustard

1 teaspoon Worcestershire sauce

1 garlic clove, finely minced or pressed

¼ teaspoon kosher salt, plus more to taste

⅛ teaspoon freshly ground black pepper

½ cup small croutons (store-bought or homemade)

Optional garnish: extra Parmesan shavings, chopped fresh parsley

Instructions

  1. Wash and peel cucumbers if desired. Slice in half lengthwise, remove seeds, and cut into thin half-moons or ribbons.
  2. In a small bowl, whisk together yogurt or mayo, Parmesan, lemon juice, Dijon mustard, Worcestershire sauce, garlic, salt, and pepper until smooth.
  3. In a large bowl, combine cucumber slices with dressing and toss gently to coat.
  4. Just before serving, add croutons and toss lightly.
  5. Transfer to a serving dish and garnish with Parmesan shavings and parsley if using.
