This Crispy Spicy Chicken Sandwich features breaded chicken cutlets marinated in buttermilk and hot sauce, fried to a golden crisp, then tossed in a buttery buffalo sauce. Perfectly tender and bursting with flavor, these sandwiches are ideal for home-cooked meals with a spicy kick.

Ingredients

Chicken and Marinade

  • 1 1/2 lbs boneless skinless chicken breast
  • 1 cup buttermilk
  • 2 Tbsp hot sauce
  • 1 tsp salt, or to taste
  • 1/4 tsp ground black pepper, or to taste

Chicken Breading

  • 1 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1 tsp salt, or to taste
  • 1/2 tsp ground black pepper
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder

Sauce

  • 1/4 cup hot sauce
  • 3 Tbsp unsalted butter

Instructions

  1. Marinate the Chicken: Slice chicken breasts in half lengthwise to make 4 thin cutlets. Use a chicken mallet to pound them evenly. In a large bowl, combine buttermilk, hot sauce, salt, and pepper. Submerge chicken in the marinade and refrigerate for at least 30 minutes or overnight for best flavor and tenderness.
  2. Prepare the Breading: In a separate bowl, mix all-purpose flour, cornstarch, salt, pepper, paprika, garlic powder, and onion powder. Remove chicken cutlets from marinade letting excess drip off.
  3. Bread the Chicken: Dredge each cutlet firmly into the breading mixture ensuring an even coating. Set aside on a plate and repeat with all cutlets.
  4. Fry the Chicken: Heat enough oil in a large pot to fully submerge the chicken to 350°F. Fry each cutlet 3–4 minutes per side or until golden brown and cooked through. Use a wire rack to drain excess oil from fried chicken.
  5. Make Buffalo Sauce: In a saucepan, melt butter and stir in hot sauce until combined and warm.
  6. Toss Chicken in Sauce: Place fried cutlets in a bowl and coat evenly with the prepared buffalo sauce.
  7. Assemble Sandwiches: Serve the buffalo chicken cutlets in burger buns. Add your favorite toppings and sauces to complete your sandwich experience.
