Ingredients

Cashew Base

  • ½ cup cashews (soaked for 3 hours or more)

Seasonings and Liquids

  • 45 millilitres lime juice (approximately juice of 1 lime)
  • ⅓ cup water
  • Pinch sea salt flakes

Instructions

  1. Soak Cashews: Place the cashews in a bowl and cover with water. For best results, soak them in the refrigerator for at least 3 hours or overnight to soften thoroughly.
  2. Alternative Soaking Method: If short on time, pour boiling water over the cashews and soak for 30 minutes to help soften them quickly.
  3. Strain Cashews: After soaking, drain the cashews carefully using a fine mesh strainer to remove the soaking water.
  4. Prepare for Blending: Transfer the strained cashews to a high-powered blender to ensure a creamy, smooth texture.
  5. Add Flavors: Add the chipotle chili powder, paprika, sea salt, lime juice, and water to the blender with the cashews.
  6. Blend Until Creamy: Blend all ingredients on high speed until the mixture is completely smooth and creamy, scraping down the sides as needed to combine all ingredients evenly.
