Ingredients

Pasta

  • 8 ounce rotini pasta (uncooked)

  • ½ teaspoon salt (or to taste)

  • 1 cup tomatoes (chopped)
  • 6 green onions (chopped)
  • ½ cup parsley (fresh, chopped)

Liquids & Dairy

  • 3 tablespoons butter (unsalted)
  • 1 cup heavy cream (or half and half)
  • ½ cup chicken broth (low sodium or no sodium added)
  • 1 cup mozzarella cheese (shredded)

Instructions

  1. Cook Pasta: Cook the rotini pasta according to package instructions until it is al dente, meaning it should be cooked through but still firm when bitten. Once cooked, drain and set aside.
  2. Melt Butter: In a large skillet, melt the unsalted butter over medium-high heat to prepare for cooking the chicken.
  3. Cook Chicken with Spices: Add the bite-sized chicken pieces to the skillet. Sprinkle with chili powder, red chili flakes, salt, and pepper. Cook the chicken, stirring occasionally, until it is no longer pink and fully cooked through, about 5 minutes.
  4. Add Vegetables and Herbs: Stir in the chopped tomatoes, green onions, and parsley. Allow the mixture to cook for an additional 2 minutes to combine flavors.
  5. Prepare Cream Sauce: Pour in the heavy cream (or half and half) and chicken broth. Bring the mixture to a boil, stirring occasionally to blend all ingredients into a creamy sauce.
  6. Combine Pasta and Sauce: Add the cooked rotini pasta into the skillet and stir well to coat the pasta with the tomato cream sauce and chicken evenly.
