Ingredients

Chicken

  • 2 large boneless, skinless chicken breasts
  • 2 teaspoons Italian seasoning

  • 1-2 tablespoons olive oil

Sauce

  • 10.5 oz. cream of chicken soup
  • 1 ½ cups milk
  • 1 cup sour cream, room temperature
  • ½ teaspoon onion powder
  • 1 oz. packet Ranch seasoning mix

Instructions

  1. Prepare the Chicken: Slice each chicken breast into 2-3 thinner slices about ½ inch thick. Use a meat tenderizer to pound the slices if needed for even thickness and juicier texture.
  2. Season the Chicken: Pat the chicken slices completely dry, then evenly sprinkle both sides with Italian seasoning, salt, and pepper. Brush one side of each piece with the melted butter, ensuring the butter has cooled slightly and is not hot.
  3. Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Sear the chicken slices in batches without overcrowding the pan for 4-5 minutes per side, until a nice golden brown crust forms. Remove the chicken and set aside on a plate.
  4. Make the Sauce: In the same skillet, reduce heat to medium and add the cream of chicken soup, milk, sour cream, onion powder, and ranch seasoning mix. Stir continuously until well combined. Allow the sauce to bubble gently and reduce slightly for about 5 minutes.
  5. Simmer Chicken in Sauce: Return the seared chicken slices to the skillet, spooning sauce over them. Partially cover the skillet with a lid and simmer for about 10 minutes, allowing the chicken to cook through fully and absorb the creamy ranch flavors.
  6. Serve: Optionally, serve the creamy ranch chicken with baked potatoes, spooning extra sauce over the potatoes for added richness. Enjoy this warm, comforting dish immediately.
