Ingredients

Chicken

  • 2 boneless, skinless chicken breasts (about 1.3 lbs. total)
  • 1/2 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp freshly cracked black pepper
  • 1/4 cup all-purpose flour
  • 2 Tbsp olive oil
  • 2 Tbsp butter, divided

Garlic Cream Sauce

  • 1 whole garlic bulb (about 8-9 garlic cloves)
  • 1 cup chicken broth
  • 3/4 cup heavy cream
  • 1/2 tsp garlic powder
  • Salt and Pepper to taste
  • Fresh chopped parsley (optional, for garnish)

Instructions

  1. Prepare Chicken: Using a sharp knife, carefully fillet each chicken breast into two thinner cutlets, or use thin-cut chicken breasts to ensure even cooking.
  2. Season and Coat: Season each chicken breast with Italian seasoning, salt, and black pepper. Sprinkle flour over both sides of the chicken breasts and rub it in to evenly coat each piece.
  3. Cook Chicken: Heat a large skillet over medium heat and add olive oil along with 1 tablespoon of butter. Once hot, add the chicken cutlets and cook for about 4 minutes per side until they turn golden brown and are cooked through. Remove the chicken from the skillet and keep warm on a clean plate.
  4. Prepare Garlic: While cooking the chicken, peel the garlic cloves and smash them gently with the side of a large chef’s knife by pressing down with the heel of your hand to release their flavor.
  5. Sauté Garlic: Return the skillet to medium-low heat and add the remaining 1 tablespoon of butter. Add the smashed garlic cloves and sauté for about 3 minutes until they are lightly browned and fragrant, stirring frequently to prevent burning.
  6. Make Sauce: Pour chicken broth and heavy cream into the skillet, then sprinkle in garlic powder. Stir well, scraping up any browned bits from the skillet’s bottom. Let the sauce simmer for 8-10 minutes until it reduces and thickens by approximately half. Taste the sauce and season with additional salt and pepper as desired.
  7. Combine and Serve: Return the cooked chicken breasts to the skillet and spoon the creamy garlic sauce over them. Allow the chicken to heat through in the sauce for a couple of minutes. Garnish with fresh chopped parsley if desired and serve immediately.
