This creamy dill chicken is a simple yet indulgent skillet dinner perfect for busy weeknights. Juicy, flour-dusted chicken breasts are seared to golden perfection, then simmered in a luscious sauce made with onion, garlic, chicken broth, heavy cream, and fresh dill for a flavorful and comforting meal.

Ingredients

Chicken

  • 4 small boneless skinless chicken breasts
  • ⅛ teaspoon salt
  • ⅛ teaspoon black pepper (optional)
  • ¼ cup flour (regular or spelt flour)

Sauce

  • 2 tablespoons olive oil
  • ½ white onion, diced
  • 2 garlic cloves, minced or finely diced
  • ¾ cup chicken broth or stock
  • ½ cup heavy cream
  • 2 tablespoons fresh dill, diced, plus more to garnish

Instructions

  1. Prepare the Chicken: Pat the chicken breasts dry with a paper towel and season both sides with salt and optional black pepper. Place the flour in a bowl and dredge each chicken breast in the flour until evenly coated; some flour may remain unused.
  2. Sear the Chicken: Heat the olive oil in a skillet over medium-high heat. Add the dredged chicken breasts and cook each side for 5-7 minutes until nicely browned and cooked through. Remove the chicken from the skillet and set aside on a plate.
  3. Cook Onion and Garlic: If needed, add a little more olive oil to the skillet. On low heat, sauté the diced onion and minced garlic for 4-5 minutes until they become soft and translucent.
  4. Make the Sauce: Pour in the chicken broth and increase the heat slightly so the liquid simmers lightly. Use a spatula to scrape up any browned bits from the bottom of the skillet. Stir in the heavy cream and allow the sauce to simmer for 4-5 minutes, reducing and thickening.
  5. Finish Cooking Chicken in Sauce: Return the chicken breasts to the skillet. Sprinkle the fresh dill over the chicken and stir it gently into the sauce. Continue cooking everything together for an additional 4-5 minutes. Check the internal temperature of the chicken with a meat thermometer to ensure it reaches 165°F (73.9°C) at the thickest part.

Notes

  • Using spelt flour makes this dish slightly healthier with a nutty flavor, but regular flour works equally well.
  • If heavy cream is unavailable, substitute with half-and-half for a lighter sauce, although it will be less rich.
