Ingredients

Spread Ingredients

  • 2 ounces cream cheese, at room temperature
  • 1 tablespoon low-fat plain Greek yogurt
  • 1 tablespoon sliced fresh chives
  • 1 tablespoon chopped fresh dill
  • ¼ teaspoon ground pepper

Sandwich Ingredients

  • 2 slices whole-wheat sandwich bread
  • ⅓ cup thinly sliced English cucumber

Instructions

  1. Prepare the Spread: In a small bowl, stir together the cream cheese, Greek yogurt, fresh chives, fresh dill, and ground pepper until the mixture is smooth and well combined.
  2. Spread on Bread: Evenly spread the cream cheese mixture on one side of each slice of whole-wheat bread.
  3. Add Cucumber Slices: Place the thinly sliced English cucumber on top of the cream cheese spread on one slice of bread.
  4. Assemble the Sandwich: Top with the second bread slice, cream cheese side down, to form the sandwich.
  5. Trim and Cut: Cut the crusts off the sandwich and then slice it in half diagonally for a classic presentation.

Notes

  • Do not make cucumber sandwiches ahead of time to avoid sogginess; prepare and serve on the same day.
  • The cream cheese mixture can be made a day ahead and stored in an airtight container in the refrigerator.
  • Serve with potato chips, cauliflower chips, sweet potato chips, beet chips, chilled soups, or chopped salads for a complete meal.
  • Whole-grain bread can be used as an alternative to whole-wheat bread if it is 100% whole grain.
