This Cottage Cheese Mac and Cheese recipe offers a creamy, rich twist on the classic comfort food by incorporating cottage cheese into the cheese sauce. It’s a nutritious, satisfying dish that’s quick to prepare and perfect for a cozy dinner.

Ingredients

Mac and Cheese Ingredients

  • 8 oz pasta (whole wheat, chickpea, or regular)
  • 1/2 cup cottage cheese (4% milkfat recommended)
  • 1 cup milk (2% milk used)
  • 1 tablespoon cornstarch
  • 4 oz shredded sharp cheddar cheese (about 1 cup)
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika

Instructions

  1. Cook the pasta: Boil the pasta according to the package directions until al dente. Drain and set aside.
  2. Prepare the cheese sauce in a blender: Combine cottage cheese, milk, cornstarch, shredded cheddar, salt, pepper, garlic powder, and paprika in a blender. Blend until smooth and creamy.
  3. Heat the sauce: Pour the cheese sauce into a skillet and heat over medium-low heat. Cook for 4 to 5 minutes, stirring occasionally, until the sauce thickens slightly.
  4. Combine pasta and sauce: Add the cooked pasta into the skillet with the thickened cheese sauce. Stir well to evenly coat the pasta.
  5. Adjust seasoning: Taste and add more salt, pepper, or other seasonings if desired. Serve immediately while hot and creamy.

Notes

  • You can use any type of pasta you prefer, including whole wheat or gluten-free varieties.
  • For a richer sauce, use full-fat milk and cheese.
  • If the sauce is too thick, thin with additional milk to reach desired consistency.
  • Leftovers can be refrigerated and gently reheated on the stovetop or microwave, adding a splash of milk to loosen the sauce as needed.
