This Cottage Cheese Egg Bake is a protein-packed frittata perfect for easy meal prep breakfasts. Combining creamy cottage cheese with eggs, sharp cheddar, and turkey bacon, this dish delivers satisfying flavor and texture in a simple baked format.

Ingredients

Egg Mixture

  • Cooking spray
  • 12 large eggs
  • 1 cup cottage cheese
  • ¾ tsp salt
  • Black pepper, to taste
  • ⅛ tsp cayenne pepper (optional)

Toppings

  • 1 cup shredded sharp cheddar or gruyere cheese
  • 4 slices cooked turkey bacon, diced small
  • 4 green onions, sliced thin, plus more for serving

Instructions

  1. Preheat and Prepare Baking Dish: Position oven rack to the middle and preheat your oven to 350°F (175°C). Lightly spray a 9×13-inch non-stick baking dish with cooking spray to prevent sticking and set it aside.
  2. Blend Egg Mixture: In a large blender, combine the eggs, cottage cheese, salt, black pepper, and optional cayenne pepper. Blend on high speed for about 20 seconds until the mixture is completely smooth and well combined.
  3. Assemble in Baking Dish: Pour the smooth egg mixture evenly into the prepared baking dish. Then sprinkle the shredded cheese, diced turkey bacon, and sliced green onions evenly over the top. Handle gently to avoid shifting the toppings.
  4. Bake: Place the baking dish carefully in the middle rack of the oven and bake for 20 to 25 minutes, or until the eggs are fully set and the edges turn lightly golden brown.
  5. Rest and Serve: Remove the egg bake from the oven and let it rest for 10 minutes before slicing and serving. Garnish with additional sliced green onions if desired.

Notes

  • Use turkey bacon for a leaner protein option.
  • Feel free to substitute cheddar with gruyere or your favorite melting cheese.
  • Optional cayenne pepper adds a gentle kick but can be omitted for milder flavor.
  • This bake is great for meal prep and reheats well throughout the week.
