Ingredients

For the Biscuits:

2 cups all-purpose flour

1 tablespoon baking powder

2 tablespoons fresh parsley, chopped

1 tablespoon fresh chives, chopped

1 tablespoon fresh thyme, chopped

1/4 cup milk (or more, as needed)

1 egg (for brushing on top)

For the Herb Butter (optional):

1/4 cup unsalted butter, melted

1 tablespoon fresh parsley, chopped

1 tablespoon fresh chives, chopped

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, salt, and baking soda.
  3. Add the cold, cubed butter to the flour mixture and cut it in using a pastry cutter or your hands until the mixture resembles coarse crumbs.
  4. Stir in the cottage cheese and chopped herbs (parsley, chives, and thyme).
  5. Gradually add the milk, stirring just until the dough comes together. The dough should be soft but not too sticky—add more milk if needed.
  6. Turn the dough out onto a lightly floured surface and gently knead it a few times to bring it together. Pat the dough into a 1-inch thick rectangle.
  7. Using a biscuit cutter or a glass, cut out biscuits and place them on the prepared baking sheet.
  8. Beat the egg and brush it lightly over the tops of the biscuits to give them a golden finish.
  9. Bake for 12-15 minutes, or until the biscuits are golden brown on top and cooked through.
  10. While the biscuits are baking, melt the butter and stir in the chopped parsley and chives.
  11. Once the biscuits are out of the oven, brush the herb butter over the tops of the warm biscuits for added flavor.

Notes
