This Coconut Key Lime Pie Smoothie is a creamy, delicious blend that perfectly mimics the flavors of a classic key lime pie. Made with simple, wholesome ingredients like frozen banana, lime zest and juice, coconut yogurt, and fresh spinach, this smoothie offers a protein-packed, dairy-free treat that’s ideal for breakfast, a snack, or a healthy dessert. The graham cracker rim and whipped cream topping add a fun, indulgent touch while keeping the recipe gluten-free and grain-free.

Ingredients

Smoothie Ingredients

  • 1 large frozen ripe banana, sliced
  • Zest from 1 small lime or key lime
  • 2 tablespoons fresh lime or key lime juice
  • ½ cup vanilla or coconut Greek yogurt (use coconut based yogurt to keep it dairy free!)
  • ½ cup light coconut milk (or milk of choice)
  • ½ cup fresh spinach
  • ½ teaspoon vanilla extract
  • Optional: 1-2 teaspoons maple syrup or honey to sweeten if necessary

For Serving

  • Extra lime wedge, for rimming glass
  • Graham cracker crumbs
  • Whipped cream
  • Shredded toasted coconut

Instructions

  1. Prepare the Glass: Add crushed graham crackers to a small plate. Use a lime wedge to wet the rim of your serving glass, then dip the rim into the graham cracker crumbs, rolling side to side until the rim is evenly coated.
  2. Blend Ingredients: In a high-powered blender, combine the frozen banana slices, lime zest, lime juice, vanilla or coconut Greek yogurt, light coconut milk, fresh spinach, and vanilla extract. Blend until smooth, adding a little more milk if needed to reach your desired consistency.
  3. Adjust Sweetness: Taste the smoothie and add 1-2 teaspoons of maple syrup or honey if you prefer it sweeter, though vanilla yogurt usually provides enough natural sweetness.
  4. Serve: Pour the smoothie into the prepared glass. Top with whipped cream and sprinkle shredded toasted coconut on top for garnish. Enjoy immediately.

Notes

  • You can substitute the vanilla or coconut Greek yogurt with any dairy-free yogurt if you prefer a vegan option.
  • If you don’t have key limes, regular limes work just as well.
  • For extra protein, consider adding a scoop of your favorite protein powder.
  • Toasting the shredded coconut enhances the coconut flavor and adds a nice texture contrast.
  • Feel free to double the recipe to serve two people.
  • Using frozen banana helps to create a creamy texture without needing ice, which can dilute the flavor.
