Chicken Ramen Stir Fry is a quick and flavorful meal that combines tender chicken, crisp vegetables, and savory ramen noodles in a stir-fry sauce. It’s customizable and perfect for busy weeknights.

Ingredients

Chicken breasts or thighs (sliced)

Ramen noodles (discard the seasoning packet)

Bell peppers (sliced)

Carrots (julienned)

Green onions (sliced)

Garlic (minced)

Soy sauce

Sesame oil

Hoisin sauce

Rice vinegar

Olive oil

Sesame seeds (optional)

Instructions

  1. Cook the ramen noodles according to package instructions, then drain and set aside.
  2. Heat olive oil in a large skillet or wok over medium-high heat. Add the chicken slices and cook until browned and cooked through, about 6-7 minutes.
  3. Add the garlic and vegetables (bell peppers, carrots, and green onions) and stir-fry for an additional 3-4 minutes, until the vegetables are tender-crisp.
  4. In a small bowl, whisk together the soy sauce, sesame oil, hoisin sauce, and rice vinegar.
  5. Add the cooked noodles and sauce to the skillet. Toss everything together to coat in the sauce, cooking for another 2-3 minutes until the noodles are heated through and slightly crispy.
  6. Sprinkle with sesame seeds and additional green onions, if desired, and serve!

Notes

For a vegetarian option, skip the chicken and add tofu or more vegetables like broccoli, zucchini, or mushrooms.

For a spicy kick, add chili paste, sriracha, or red pepper flakes to the stir-fry sauce.

Feel free to substitute or add other vegetables like snow peas, cabbage, or baby corn.

If using frozen vegetables, they work perfectly in this stir-fry.

For extra flavor, you can add oyster sauce or a squeeze of lime to the stir-fry sauce.
