This Chicken Caesar Sandwich brings together the classic flavors of Caesar salad in a convenient sandwich form. Featuring garlicky toasted rolls, crisp Romaine, tender rotisserie chicken, and a creamy Caesar dressing, it’s a quick and satisfying meal perfect for lunch or a light dinner.

Ingredients

Garlic Butter Spread

  • 1/4 cup unsalted butter, at room temperature
  • 1 teaspoon minced garlic
  • 2 teaspoons minced parsley
  • 2 tablespoons grated Parmesan cheese
  • Pinch of salt and pepper

Sandwich Components

  • 2 French or Hoagie rolls, halved
  • 1 heart of Romaine lettuce, chopped
  • 1 cup diced rotisserie chicken
  • 1 recipe Caesar dressing

Instructions

  1. Preheat the Oven: Set your oven to 400°F to prepare for toasting the rolls, ensuring a crisp and golden texture.
  2. Make Garlic Butter: In a small bowl, combine the unsalted butter with minced garlic, parsley, grated Parmesan, and a pinch of salt and pepper. Stir well until evenly blended to spread flavor throughout the rolls.
  3. Prepare and Toast Rolls: Spread the garlic butter mixture generously on both cut sides of the halved rolls. Place them cut side up on a baking sheet and bake in the oven for about 5 minutes, or until the bread is golden brown and lightly toasted.
  4. Remove and Set Aside Rolls: Take the toasted rolls out of the oven and allow them to cool slightly while you prepare the filling.
  5. Toss Salad Filling: In a medium bowl, combine chopped Romaine lettuce and diced rotisserie chicken. Pour in the Caesar dressing and toss everything together until the leaves and chicken are well coated.
  6. Assemble Sandwiches: Divide the dressed salad mixture evenly between the two toasted rolls. Serve immediately to enjoy the sandwich at its freshest.

Notes

  • For a sharper flavor, use freshly grated Parmesan cheese.
  • Rotisserie chicken adds convenience, but grilled or roasted chicken breast works well too.
  • Adjust the amount of Caesar dressing to your taste preference to avoid sogginess.
  • To add crunch, consider adding some crispy bacon or croutons inside the sandwich.
  • This sandwich is best eaten immediately after assembling to maintain the crispness of the toasted rolls.
