A creamy and zesty cheese dip made with Velveeta, Rotel tomatoes, and ranch seasoning. This quick and flavorful queso is perfect for parties, game day, or casual snacking.

Ingredients

16 oz Velveeta cheese, cubed

1 (10 oz) can Rotel tomatoes with green chiles, undrained

1 packet (1 oz) ranch seasoning mix

½ cup milk (optional, for thinning)

2 Tbsp chopped green onions (plus extra for garnish)

Optional: jalapeños or hot sauce to taste

Instructions

  1. In a medium saucepan over low heat, melt Velveeta cubes until smooth, stirring frequently.
  2. Stir in the entire can of Rotel (including liquid) and ranch seasoning until fully combined.
  3. If desired, stir in milk a little at a time to reach your preferred dip consistency.
  4. Add chopped green onions and optional jalapeños or hot sauce for extra flavor and heat.
  5. Transfer to a serving bowl, garnish with more green onions, and serve warm with chips, crackers, or veggies.

Notes

Add cooked ground beef, sausage, or shredded chicken for a heartier dip.

Use cheddar, pepper jack, or Monterey Jack to change the cheese flavor profile.

Try adding taco seasoning or cumin for a Tex-Mex twist.

For easy prep, make it in a slow cooker on low for 1–2 hours.
