A creamy and flavorful Cheesy Baked Garlic Bread Dip that combines roasted garlic, multiple cheeses, and fresh herbs baked to bubbly perfection. This savory dip is perfect for parties or snacking and pairs wonderfully with toasted crostinis.

Ingredients

Cheese and Dairy

  • 8 oz. package cream cheese, softened
  • 3/4 cup cottage cheese
  • 1/4 cup mayonnaise
  • 1 1/2 cups shredded mozzarella cheese, divided
  • 1 1/2 cups grated parmesan cheese, divided

Herbs and Spices

  • 1/2 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp garlic powder
  • 2 tbsp fresh parsley, chopped, divided
  • 3 tbsp chopped chives, divided

Other Ingredients

  • 3 heads garlic
  • 2 tbsp olive oil

Instructions

  1. Preheat and prepare garlic: Preheat your oven to 375°F (190°C). Slice about 1/4 inch off the top of each garlic head to expose the tops of the cloves. Place each garlic head on a piece of aluminum foil, drizzle olive oil over the exposed cloves making sure they are well coated, and optionally sprinkle a little salt.
  2. Roast garlic: Wrap the garlic heads tightly in the aluminum foil and place them on a baking sheet or directly on the oven rack. Roast for 30-40 minutes until the garlic cloves are soft and golden brown.
  3. Mix base ingredients: Once roasted, squeeze the softened garlic cloves from their skins into a large bowl. Add the softened cream cheese, cottage cheese, and mayonnaise. Use a handheld mixer to blend until smooth and creamy.
  4. Add cheeses, herbs, and spices: Fold in 1 cup shredded mozzarella, 1 cup grated parmesan, 2 tbsp chopped chives, 1 tbsp chopped parsley, onion powder, salt, and garlic powder. Mix thoroughly until well combined.
  5. Assemble dip: Spoon the mixture into a baking dish, spreading evenly. Top with the remaining mozzarella and parmesan cheeses to create a cheesy crust.
  6. Bake the dip: Bake the assembled dip in the preheated oven for 15-20 minutes or until it is bubbly and golden on top. Remove from oven and let it cool slightly.
  7. Garnish and serve: Sprinkle the baked dip with the remaining fresh chives and serve warm with crostinis or toasted bread slices for dipping.
