These Egg Bites are a delicious and protein-packed breakfast or snack option made with eggs, cottage cheese, and cheddar. Baked in a silicone muffin pan, they come out fluffy and flavorful, with the perfect balance of creamy and cheesy textures. Ingredients

Egg Mixture

  • 8 large eggs
  • 1 cup cottage cheese (4% or low-fat)
  • ½ cup shredded sharp cheddar cheese
  • ¼ teaspoon fine salt
  • Pinch of black pepper

Additional Ingredients

  • Fresh chives, roughly chopped
  • Cooking spray

Instructions

  1. Prepare the muffin pan: Mist the cups of a silicone muffin pan lightly with cooking spray. Preheat your oven to 350℉ to ensure even baking.
  2. Blend the egg mixture: In a blender, combine the eggs, cottage cheese, shredded cheddar, salt, and pepper. Blend until the mixture is smooth and well combined. A small blender like a Nutribullet works especially well for this step.
  3. Fill the muffin cups: Pour the blended egg mixture evenly into the prepared muffin cups, filling each about halfway. Sprinkle chopped fresh chives on top. At this stage, you can also add any desired mix-ins such as chopped vegetables or cooked bacon for added flavor and texture.
  4. Bake: Place the muffin pan in the preheated oven and bake for 20 to 22 minutes. The egg bites should puff up and become slightly firm to the touch in the center when done.
  5. Cool and remove: Remove the pan from the oven. The egg bites will puff up during baking but will settle slightly once out of the oven. Let them cool for a few minutes before carefully removing them from the pan.
  6. Store properly: Store any leftover egg bites in an airtight container in the refrigerator for up to 5 days. They can be reheated quickly for a convenient and tasty meal anytime.
