A sweet-savory grilled cheese sandwich layered with gooey melted cheddar, caramelized onions, and crisp apple slices, all tucked into golden, buttery toasted bread.

Ingredients

2 tablespoons butter, divided

1 large sweet onion, thinly sliced

1 medium apple (Granny Smith or Honeycrisp), thinly sliced

4 slices of bread (sourdough or whole wheat recommended)

46 slices sharp cheddar or Gruyère cheese

Optional pinch of salt and pepper to taste

Instructions

  1. Melt 1 tablespoon of butter in a skillet over medium heat. Add sliced onion with a pinch of salt and cook, stirring occasionally, for 15–20 minutes until golden and caramelized.
  2. Add apple slices and cook for an additional 3–5 minutes until just softened. Set aside.
  3. Butter one side of each slice of bread with the remaining butter.
  4. On the non-buttered side of two slices, layer cheese, then top with the onion and apple mixture. Add more cheese if desired. Top with remaining bread, butter side out.
  5. Heat skillet over medium-low. Grill each sandwich for 3–4 minutes per side, pressing gently, until golden brown and cheese is melted.
  6. Let rest for a minute, then slice and serve warm.

Notes

Try brie or havarti cheese for a creamier melt.

Use pear slices instead of apple for a milder flavor.

Caramelized shallots or red onions offer a different sweetness.

Add a drizzle of honey or fig jam for a sweet boost.
