Ingredients

4 cups rice cereal (like Rice Krispies)

½ cup unsalted butter

1 package (10 oz) marshmallows (mini or regular)

Instructions

  1. Prepare the bottom layer: In a large pot over low heat, melt the butter. Once melted, add the marshmallows and stir constantly until they are completely melted and smooth. Remove from heat and stir in the vanilla extract.
  2. Combine with the rice cereal: Add the rice cereal to the melted marshmallow mixture, stirring gently until the cereal is evenly coated. Pour the mixture into a greased 9×9-inch baking dish and press it down evenly to form a solid, firm base. Allow it to cool and set while you make the caramel layer.
  3. Make the caramel layer: In a medium saucepan, melt the butter over medium heat. Stir in the brown sugar and heavy cream, bringing it to a gentle simmer. Allow the mixture to simmer for 3-4 minutes, stirring occasionally, until it thickens slightly. Remove from heat and stir in the vanilla extract and a pinch of salt. Pour the warm caramel evenly over the rice cereal layer, spreading it out with a spatula. Let the caramel cool slightly and firm up before adding the chocolate topping.
  4. Make the chocolate topping: In a microwave-safe bowl, melt the chocolate chips and butter together. Heat in 20-second intervals, stirring between each, until the mixture is smooth and completely melted. Pour the chocolate over the caramel layer, spreading it evenly to cover the entire surface.
  5. Set the bars: Place the bars in the refrigerator for at least 2 hours or until the chocolate has fully set. Once set, cut into squares or bars and serve.
