Ingredients

For the Tacos:

4 small flour tortillas (or taco shells of your choice)

2 tablespoons unsalted butter

2 ripe bananas, sliced

1/4 cup brown sugar

1 teaspoon ground cinnamon

1/4 teaspoon salt

1/4 cup chopped mixed nuts (such as walnuts, pecans, or almonds)

1 tablespoon honey (optional, for drizzling)

For the Caramel Sauce:

1/4 cup unsalted butter

1/2 cup brown sugar

1/4 cup heavy cream

1/2 teaspoon vanilla extract

Pinch of salt

Instructions

  1. Make the Caramel Sauce: In a small saucepan, melt the butter over medium heat. Add the brown sugar and bring to a simmer. Stir constantly until the sugar has completely dissolved. Slowly add the heavy cream, stirring until smooth. Let it simmer for 2-3 minutes, then remove from heat and stir in the vanilla extract and a pinch of salt. Set the caramel sauce aside to cool slightly.
  2. Make the Tacos: In a large skillet, melt the butter over medium heat. Add the sliced bananas, brown sugar, cinnamon, and salt. Stir gently to coat the bananas evenly and cook for about 3-4 minutes, until the bananas are soft and caramelized.
  3. While the bananas are cooking, warm the flour tortillas in a dry skillet for about 1-2 minutes on each side until they’re soft and pliable. Alternatively, you can lightly fry the tortillas in a bit of butter for extra crispiness.
  4. Once the bananas are caramelized, remove them from the skillet and set them aside. Add the chopped nuts to the skillet and toast them for 1-2 minutes, stirring occasionally to avoid burning.
  5. To assemble the tacos, place the warm tortillas on serving plates. Spoon the caramelized bananas into the center of each tortilla.
  6. Drizzle the caramel sauce over the bananas and sprinkle with the toasted nuts. Optionally, drizzle with honey for an extra layer of sweetness.

Notes
