Cajun Potato Soup is a hearty and creamy dish that combines the comforting texture of potatoes with bold Cajun spices and savory smoked sausage. Perfect for chilly days, this flavorful soup is easy to prepare and great for a crowd.

Ingredients

  • 6 medium potatoes, peeled and diced
  • 1 lb. smoked sausage, sliced
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tbsp Cajun seasoning
  • Salt and pepper to taste
  • 1/4 cup chopped green onions (for garnish)

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the sausage slices and cook until browned, about 5-7 minutes. Remove the sausage and set it aside.
  2. In the same pot, add the diced onion, bell pepper, and garlic. Sauté for about 3 minutes until the vegetables are softened.
  3. Add the diced potatoes to the pot, followed by the chicken broth and Cajun seasoning. Stir to combine and bring to a boil. Once boiling, reduce the heat and let it simmer for 15-20 minutes, or until the potatoes are tender.
  4. Once the potatoes are cooked, mash some of the potatoes in the pot to thicken the soup and give it a creamy texture.
  5. Return the sausage to the pot, then add the heavy cream. Stir well and let it cook for an additional 5 minutes.
  6. Season with salt and pepper to taste. Serve hot, topped with green onions for garnish.

Notes

  • The soup can be stored in the fridge for up to 3 days in an airtight container.
  • If freezing, leave out the sausage before freezing, as it may affect the texture when reheated.
  • For a vegetarian version, skip the sausage and use vegetable broth instead of chicken broth.
  • If you want a creamier soup, add shredded cheese near the end of cooking.
  • Add more Cajun seasoning, cayenne pepper, or hot sauce for extra spiciness.
