Butterscotch Crunchies are no-bake, sweet, and crunchy treats made with butterscotch chips, peanut butter, and crispy cereal. Perfect for quick snacks or party bites, these easy-to-make desserts are rich, chewy, and irresistibly delicious.

Ingredients

1 cup butterscotch chips

1/4 cup creamy peanut butter

3 cups crispy rice cereal (or cornflakes)

1/4 cup mini marshmallows (optional)

1 teaspoon vanilla extract (optional)

Instructions

  1. In a microwave-safe bowl, melt butterscotch chips and peanut butter in 30-second intervals, stirring until smooth.
  2. Stir in cereal until evenly coated. Fold in marshmallows and vanilla if using.
  3. Drop spoonfuls of mixture onto a parchment-lined tray using a spoon or cookie scoop.
  4. Let cool at room temperature for 30–45 minutes or refrigerate to speed up setting.
  5. Once set, serve or store in an airtight container.
