A vibrant and flavorful dish that combines the sweetness of brown sugar and pineapple with tender chicken breasts. Perfect for a quick weeknight dinner or special occasion.

Ingredients

4 boneless, skinless chicken breasts

1 cup pineapple chunks (fresh or canned)

1/2 cup brown sugar

1 tablespoon soy sauce

1 tablespoon Dijon mustard

1/2 teaspoon garlic powder

1/2 teaspoon ground ginger

1 tablespoon olive oil

Salt and pepper, to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a large oven-safe skillet over medium heat. Season the chicken breasts with salt and pepper on both sides. Add chicken to the skillet and sear for 3-4 minutes per side until golden brown.
  3. In a small bowl, whisk together brown sugar, soy sauce, Dijon mustard, garlic powder, and ground ginger.
  4. Pour the brown sugar mixture over the chicken in the skillet. Add pineapple chunks and distribute evenly around the chicken.
  5. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  6. Once done, remove from the oven and let the chicken rest for a few minutes before serving. Spoon pineapple sauce over the chicken for extra flavor.

Notes

For a juicier version, substitute chicken breasts with boneless, skinless chicken thighs.

Add vegetables like bell peppers or onions to the pan before baking for extra flavor and color.

For a spicy-sweet variation, add a pinch of red pepper flakes or a dash of hot sauce to the brown sugar mixture.
