Ingredients

1 3/4 cups all-purpose flour

1/2 cup cold unsalted butter, cubed

1/4 teaspoon salt

45 tablespoons ice water

3/4 cup brown sugar

1 tablespoon ground cinnamon

1/2 teaspoon vanilla extract (optional)

Pinch of nutmeg (optional)

1 tablespoon milk (for brushing)

1/2 cup powdered sugar (for glaze)

12 tablespoons milk or cream (for glaze)

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Combine flour and salt in a bowl. Cut in cold butter until the mixture resembles coarse crumbs.
  3. Add ice water one tablespoon at a time until dough just comes together.
  4. Divide dough in half. Roll out one half and place on the baking sheet.
  5. Mix brown sugar, cinnamon, vanilla, and nutmeg in a small bowl.
  6. Spread the filling over the rolled-out dough, leaving a small border around the edges.
  7. Roll out the second dough half and place it on top. Press edges to seal and trim if needed.
  8. Dock the top with a fork and brush lightly with milk.
  9. Bake for 20–25 minutes until golden and crisp. Cool slightly.
  10. Mix powdered sugar with milk or cream until smooth and pourable. Drizzle over warm bars.
  11. Let glaze set, then slice into bars or squares.
