Juicy baked chicken breasts stuffed with tender broccoli and gooey melted cheese, seasoned with savory spices and baked until golden—a satisfying and wholesome main dish.

Ingredients

4 boneless, skinless chicken breasts

Salt and pepper, to taste

8 oz fresh or frozen broccoli florets, finely chopped

1 cup shredded cheese (cheddar, mozzarella, or blend)

2 tablespoons olive oil or melted butter

½ teaspoon garlic powder

½ teaspoon onion powder

¼ teaspoon paprika (optional)

Toothpicks or kitchen twine for securing

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  2. Season chicken breasts with salt, pepper, garlic powder, onion powder, and paprika.
  3. Slice a pocket into each breast, being careful not to cut all the way through.
  4. In a bowl, combine chopped broccoli and shredded cheese. Stuff the mixture into each chicken pocket and secure with toothpicks or twine.
  5. Brush chicken with olive oil or melted butter and place in the prepared baking dish.
  6. Bake for 25–30 minutes or until internal temperature reaches 165°F (74°C) and cheese is melted and bubbly.
  7. Let rest for 5 minutes before removing toothpicks and serving.

Notes

Use broccoli slaw for a quicker stuffing option.

Swap cheeses—pepper jack, Gruyère, or mozzarella all work well.

Add mushrooms or bell peppers for extra flavor.

Serve with cauliflower rice or salad for a low-carb meal.

Freeze stuffed chicken individually and reheat from thawed for future meals.
