Breakfast Butter Swim Biscuits are a rich, flaky, and buttery treat that will quickly become your new favorite breakfast! These biscuits are baked in a pool of melted butter, creating a golden, crisp edge while keeping the insides soft and tender. With just a few ingredients and a simple method, you’ll have a delicious homemade biscuit perfect for breakfast, brunch, or even as a side to your favorite meal.

Ingredients

For the Biscuits:

2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon salt

1/2 teaspoon baking soda

1/2 cup cold unsalted butter, cubed

1 cup buttermilk

For the Butter Pool:

1/2 cup unsalted butter (1 stick), melted

Instructions

  1. Preheat your oven to 450°F (230°C) and grease a 9×9-inch baking dish with butter or cooking spray.
  2. In a large bowl, whisk together the flour, baking powder, salt, and baking soda.
  3. Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, cut the butter into the flour until the mixture resembles coarse crumbs with pea-sized bits of butter.
  4. Pour in the buttermilk and stir until just combined. Do not overmix, as this will affect the texture of your biscuits. The dough should be slightly sticky.
  5. Turn the dough out onto a lightly floured surface and gently pat it into a rectangle about 1 inch thick.
  6. Fold the dough over itself a few times (this helps create layers), then gently pat it down again into a 1-inch thick rectangle.
  7. Using a biscuit cutter or a glass, cut out the biscuits and place them into the prepared baking dish.
  8. Pour the melted butter into the bottom of the baking dish around the biscuits. Be sure the butter is evenly distributed, as this will help create that signature crispy edge.
  9. Bake for 12-15 minutes or until the tops of the biscuits are golden brown.
  10. Let the biscuits cool for a few minutes before serving.

Notes

Add shredded cheese (cheddar or Parmesan) to the dough for a cheesy twist.

Toss in fresh herbs like rosemary or thyme for a savory version.

Top the biscuits with a drizzle of honey or fruit jam for a touch of sweetness.
