Ingredients

Salmon and Seasoning

  • 1 pound fresh salmon (cut into 4 pieces)
  • 1/2 teaspoon garlic powder
  • Salt & pepper (to taste)

Cooking Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1/2 medium onion (chopped)
  • 3/4 cup chicken broth (use low sodium if sensitive to salt)
  • 1 teaspoon fresh lemon juice
  • 1 (5.2 oz/150g) package Boursin Fine Herbs & Garlic cheese (softened)
  • 1-2 tablespoons chopped parsley

Instructions

  1. Prepare the Salmon: Take the salmon out of the fridge 15-30 minutes before starting to allow it to come to room temperature. Cut into 4 pieces, pat dry each piece, then season evenly with garlic powder, salt, and pepper.
  2. Cook Salmon: Heat butter and olive oil in a skillet over medium-high heat until hot. Add the salmon pieces and cook for 3-4 minutes per side until they are lightly browned on the outside but not fully cooked through. Remove the salmon and transfer to a plate.
  3. Sauté Onions: In the same skillet, add the chopped onions and sauté for about 5 minutes, stirring frequently, until the onions are softened and lightly golden.
  4. Make the Sauce: Add the chicken broth, lemon juice, and softened Boursin cheese to the skillet. Stir continuously until the cheese melts into a smooth sauce. Let the sauce bubble and reduce gently for about 4-5 minutes. Then stir in the chopped parsley.
  5. Finish Cooking Salmon with Sauce: Return the salmon to the skillet, spooning some sauce over the top. Reduce the heat and cook for an additional 3-5 minutes or until the salmon is fully cooked through and flakes easily with a fork, and the sauce has thickened slightly.
  6. Season and Serve: Taste the sauce and season with additional salt and pepper if needed. Serve the salmon immediately, spooning extra sauce over each piece.

Notes

  • Bringing salmon to room temperature before cooking helps achieve even cooking and better sear.
  • Do not overcook the salmon in the first step; it will finish cooking in the sauce.
  • If desired, use low sodium chicken broth to reduce salt content.
  • Boursin cheese adds a rich, herby flavor and makes the sauce creamy without additional cream.
  • Fresh parsley adds brightness and color but can be substituted with fresh dill or chives.
