Boat Dip (Rotel Ranch Dip)

A creamy, tangy, and slightly spicy no-cook dip made with Rotel tomatoes, ranch seasoning, taco mix, and cheese. Perfect for parties, casual snacking, and, of course, boat days!

Ingredients

16 oz sour cream

1 (10 oz) can Rotel diced tomatoes & green chilies, drained

1 oz packet ranch seasoning mix

1 oz packet taco seasoning mix

8 oz shredded Cheddar-Jack or Colby-Jack cheese

¼ cup sliced scallions (optional)

Optional: drained corn, chopped cilantro, lime zest

Instructions

  1. In a medium bowl, mix together sour cream, drained Rotel, ranch seasoning, taco seasoning, and shredded cheese until fully combined.
  2. Cover and refrigerate for at least 1 hour (preferably 2–3 hours) to allow the flavors to blend.
  3. Garnish with sliced scallions, cilantro, or lime zest if desired. Serve chilled or at room temperature with chips, crackers, or veggies.

Notes

Use Greek yogurt instead of sour cream for a tangier, high-protein version.

Mix in hot Rotel or jalapeños for extra spice.

Add corn or black beans for more texture and volume.

Let sit at room temperature before serving if too thick, or stir in a splash of milk.

Best made ahead and stored chilled for max flavor.
