Ingredients

For the Crust:

1 1/2 cups all-purpose flour

1/2 cup granulated sugar

8 oz cream cheese, softened

1/2 cup granulated sugar

1 teaspoon vanilla extract

1 large egg

1 tablespoon all-purpose flour

For the Blueberry Topping:

1 1/2 cups fresh blueberries (or frozen, thawed)

2 tablespoons granulated sugar

1 tablespoon cornstarch

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper.
  2. For the crust, combine the flour, sugar, softened butter, and salt in a medium bowl. Mix until the dough comes together, then press it evenly into the bottom of the prepared dish. Bake for 10-12 minutes, or until lightly golden brown. Let it cool slightly while preparing the cream cheese layer.
  3. For the cream cheese filling, beat the softened cream cheese and sugar together until smooth. Add the vanilla extract, egg, and flour, and mix until fully combined. The filling should be thick and creamy. Pour it evenly over the slightly cooled crust and bake for 18-20 minutes, or until the filling is set and lightly golden around the edges.
  4. For the blueberry topping, combine the blueberries, sugar, and cornstarch in a small saucepan. Cook over medium heat, stirring occasionally, for 5-7 minutes until the mixture thickens and the blueberries soften. Remove from heat and allow it to cool slightly.
  5. Once the cream cheese layer is set, pour the blueberry topping over it and spread evenly. Return the bars to the oven and bake for an additional 5-7 minutes, or until the topping is bubbly and the filling is fully set.
