Delightful Biscoff No Bake Cookies that combine the rich flavors of Biscoff spread and quick-cook oats into a simple, no-bake treat ready in just 10 minutes. Perfect for an easy dessert or snack without turning on the oven.

Ingredients

Wet Ingredients

  • 1/2 cup milk (skim up to 2% works best)
  • 1/2 cup unsalted butter
  • 1 teaspoon vanilla paste
  • 1/2 cup Biscoff spread

Dry Ingredients

  • 2 cups granulated sugar
  • 1 pinch of salt
  • 2 1/2 cups quick cook oatmeal

Instructions

  1. Combine and boil wet ingredients: In a large saucepan over medium-high heat, combine the butter, sugar, and milk. Stir occasionally until the mixture comes to a boil. Once boiling, continue to boil for exactly one minute to ensure proper caramelization. Then, remove the saucepan from heat.
  2. Add flavorings and oats: While still hot, stir in the Biscoff spread, vanilla paste, and pinch of salt until the mixture is thoroughly combined. Then, gently fold in the quick-cook oatmeal until evenly distributed. If the mixture appears too runny to hold shape, add an additional 1/4 cup of oats to thicken the batter.
  3. Form cookies and set: Using a spoon or cookie scoop, drop 1 to 2 tablespoon-sized portions of the cookie dough onto parchment paper-lined trays. Space them evenly apart. Allow the cookies to set and firm up at room temperature for about one hour. Once set, transfer cookies to an airtight container for storage. Enjoy!

Notes

  • For best results, use skim or 2% milk for the right consistency.
  • Boiling the mixture for a full minute is crucial for the texture and proper setting of the cookies.
  • If you prefer crunchier cookies, add a bit more quick cook oats.
  • Store cookies in an airtight container at room temperature; consume within one week for optimal freshness.
  • This recipe yields approximately 36 small cookies, ideal for sharing.
