Ingredients

1 cup unsalted butter (2 sticks)

1 cup granulated sugar

1/4 teaspoon salt

1/2 teaspoon vanilla extract

2 cups semi-sweet chocolate chips

1/2 cup chopped walnuts or pecans (optional, for topping)

Instructions

  1. Prepare the Pan: Line a 9×13-inch baking dish with parchment paper or aluminum foil for easy removal of the toffee later.
  2. Melt the Butter: In a medium saucepan, melt the butter over medium heat, stirring occasionally. Once melted, add the granulated sugar and salt. Bring to a gentle boil, stirring constantly.
  3. Cook the Toffee: Continue to cook the mixture for 5-7 minutes, stirring constantly, until the toffee thickens and reaches a golden-brown color. The mixture should begin to pull away from the sides of the pan, and a candy thermometer should read 300°F (150°C), which is the hard crack stage.
  4. Pour the Toffee: Immediately pour the toffee mixture into the prepared pan, spreading it evenly to cover the bottom. Be careful, as the toffee will be very hot.
  5. Add the Chocolate: While the toffee is still hot, sprinkle the chocolate chips evenly over the surface. Let it sit for 2-3 minutes to allow the chocolate to melt.
  6. Spread the Chocolate: Once the chocolate has melted, use a spatula to spread it evenly over the toffee layer, creating a smooth chocolate layer.
  7. Add Nuts: Sprinkle chopped nuts (if using) on top of the melted chocolate, pressing them lightly into the chocolate so they stick.
  8. Chill: Place the toffee in the refrigerator and let it chill for at least 2 hours, or until it has fully set and hardened.
  9. Break into Pieces: Once the toffee has set, remove it from the pan and break it into pieces of your desired size.

Notes

For a salted caramel version, drizzle caramel sauce over the chocolate before adding the nuts.
