Ingredients

1 tablespoon olive oil

1 large onion, chopped

2 cloves garlic, minced

3 medium carrots, peeled and diced

2 celery stalks, chopped

1 small head of cabbage, chopped

1 can (14.5 oz) diced tomatoes (with juices)

4 cups vegetable broth

1 teaspoon dried thyme

1/2 teaspoon dried rosemary

Salt and pepper to taste

1 bay leaf

1 cup green beans, chopped (optional)

1/2 cup frozen peas (optional)

1 tablespoon fresh lemon juice (optional)

Fresh parsley or basil for garnish (optional)

Instructions

  1. Sauté the Vegetables: Heat olive oil in a large pot over medium heat. Add chopped onion and sauté for 5-6 minutes until softened. Add minced garlic and cook for another minute until fragrant.
  2. Add the Carrots, Celery, and Cabbage: Add diced carrots, chopped celery, and cabbage to the pot. Stir and cook for 5 minutes until the cabbage begins to wilt.
  3. Add the Tomatoes and Broth: Stir in the diced tomatoes (with their juices) and vegetable broth. Add thyme, rosemary, salt, pepper, and bay leaf. Bring the soup to a simmer.
  4. Simmer the Soup: Reduce the heat to low, cover the pot, and let the soup simmer for 30-40 minutes, or until the vegetables are tender.
  5. Add the Green Beans and Peas (Optional): Add green beans and peas about 10 minutes before the soup is done cooking. Stir to combine and cook through.
  6. Adjust Seasoning: Taste and adjust seasoning with more salt, pepper, or herbs. Optionally, add fresh lemon juice for a zesty finish.
