BBQ Chicken Sweet Potato Bowl is a hearty, flavorful dish with smoky BBQ chicken served over roasted sweet potatoes, topped with fresh veggies, avocado, and extra BBQ sauce. It’s a delicious, satisfying meal perfect for dinner or meal prep.

Ingredients

For the BBQ Chicken:

2 chicken breasts (boneless, skinless)

1/2 cup BBQ sauce (your favorite brand or homemade)

1 tablespoon olive oil

Salt and pepper, to taste

For the Sweet Potato Bowl:

2 large sweet potatoes, peeled and cubed

1 tablespoon olive oil

1 teaspoon paprika

1/2 teaspoon garlic powder

Salt and pepper, to taste

1/2 cup corn kernels (fresh, frozen, or canned)

1/2 red onion, thinly sliced

1 avocado, sliced

Fresh cilantro, for garnish

Extra BBQ sauce, for drizzling

Instructions

  1. Preheat the oven to 400°F (200°C). Toss cubed sweet potatoes with olive oil, paprika, garlic powder, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes, stirring halfway through.
  2. Heat olive oil in a skillet over medium-high heat. Season chicken breasts with salt and pepper, cook for 6-7 minutes per side until fully cooked (165°F/75°C). Remove chicken, rest for a few minutes, then shred with forks. Toss the shredded chicken with BBQ sauce.
  3. Divide roasted sweet potatoes into bowls. Top with BBQ chicken, corn, red onion, avocado, extra BBQ sauce, and cilantro.
  4. Serve immediately and enjoy!

Notes
