Ingredients

Sauce

  • 1/2 cup mayo (or light mayo)
  • 1/3 cup sweet chili sauce

Salmon

  • 3/4 pound salmon, cut into 2 fillets
  • Kosher salt, to taste
  • Black pepper, to taste

  • 1 (14 oz) bag frozen cauliflower rice

Instructions

  1. Make the Bang Bang Sauce: In a small bowl, whisk together the mayo, sweet chili sauce, and Sriracha until smooth and well combined to create the Bang Bang sauce.
  2. Prepare the Salmon: Brush some of the Bang Bang sauce over both sides of the salmon fillets. Sprinkle the fillets generously with kosher salt and black pepper to season.
  3. Cook the Salmon: Choose your preferred cooking method. For oven baking, place the salmon skin-side down on a lined baking sheet and bake in a preheated 400°F (204°C) oven for 13 to 15 minutes until cooked through. For air frying, place the salmon skin-side down in the air fryer basket and cook at 400°F for 13 to 15 minutes.
  4. Prepare Cauliflower Rice: Cook the frozen cauliflower rice according to the package instructions, typically by sautéing or microwaving until tender.
  5. Serve: Divide the cooked cauliflower rice evenly onto two plates. Place one salmon fillet on top of each rice bed. Drizzle with additional Bang Bang sauce and garnish with sliced green onions and a lemon wedge if desired.
