Ingredients

For the Chicken

  • 1 lb Chicken Breasts
  • Organic Balsamic Dressing (enough to cover chicken, approx. 1/4 cup)

For the Wrap

  • Gluten Free Wraps, Original or Spinach (4 wraps)
  • Goat Cheese Logs (about 4 tbsp)
  • Organic Blueberries (1/2 cup)
  • Raw Almonds, Pecans & Pistachio Kernels, mixed (1/4 cup)
  • Arugula & Spinach Mix (1 cup)

Instructions

  1. Marinate the Chicken: Place the chicken breasts in a shallow dish and cover with organic balsamic dressing. Cover the dish and refrigerate for at least 30 minutes, or up to overnight to enhance flavor.
  2. Cook the Chicken: Preheat your grill to medium heat or heat a cast iron skillet over medium. Cook the marinated chicken breasts for 3-4 minutes on each side until the internal temperature reaches 165ºF (75ºC). Remove from heat and slice into thin strips.
  3. Assemble the Wraps: Lay a gluten-free wrap flat on a clean surface. Spread about 1 tablespoon of goat cheese evenly over the wrap. Add a handful of arugula and spinach mix, about 3 ounces of sliced chicken breast, a scattering of blueberries, and a sprinkle of mixed nuts.
  4. Roll and Serve: Fold in the ends of the wrap and roll tightly while folding to secure all contents inside. Slice each wrap gently in half. Serve immediately and enjoy!
