Ingredients

Dry Ingredients

Wet Ingredients

  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 (5.3 ounce) containers blueberry Greek yogurt

Glaze

  • 2 cups powdered sugar
  • 1/3 cup milk
  • 2 teaspoons blueberry jam or mashed fresh blueberries

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Lightly grease a 24-cup mini muffin pan with non-stick cooking spray to ensure the fritters do not stick during baking.
  2. Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined. This forms the base of your batter.
  3. Mix Wet Ingredients: In a separate small bowl, whisk together the melted and slightly cooled unsalted butter, large egg, vanilla extract, and blueberry Greek yogurt until smooth and uniform. This mixture adds richness and moisture to the fritters.
