These Apple Fritter Bites are a deliciously sweet and cinnamon-spiced treat, perfect for a cozy breakfast or snack. Soft and tender on the inside with a caramelized, glazed exterior, these bite-sized fritters are easy to make in the oven with a simple apple cider glaze that adds a perfect touch of tartness and shine.

Ingredients

Fritters

  • Nonstick cooking spray (for greasing)
  • 1 ½ cups all purpose flour
  • 2 tsp baking powder
  • ½ tsp kosher salt
  • 2 tsp cinnamon
  • ¼ cup unsalted butter, melted
  • ¼ cup granulated sugar
  • 1 large egg
  • ½ tsp vanilla flavoring
  • ½ cup no-sugar added applesauce
  • 1 ½ cups peeled and finely diced Honeycrisp apples (about 2 medium apples)

Glaze

  • 2 cups powdered sugar
  • ⅓ cup plus 2 tablespoons apple cider or apple juice

Instructions

  1. Preheat and prepare baking sheet: Preheat your oven to 400°F (200°C). Lightly grease a baking sheet with nonstick cooking spray to prevent sticking.
  2. Mix dry ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, kosher salt, and cinnamon until evenly combined to ensure an even flavor in the fritters.
  3. Prepare wet ingredients: In a large bowl, whisk the melted unsalted butter with granulated sugar until smooth. Then, add the egg and beat until combined. Stir in the vanilla extract and no-sugar added applesauce for moisture and flavor.
  4. Combine batter: Gradually add the dry ingredient mixture into the wet ingredients bowl and stir until just combined. Fold in the finely diced peeled Honeycrisp apples gently to distribute them evenly without overmixing.
  5. Shape fritters and bake: Using a tablespoon, scoop the batter into mounds spaced a few inches apart on the prepared baking sheet. Bake them in the preheated oven for 10 minutes until they begin to set and lightly puff up.
  6. Make the glaze: While the fritters bake, whisk together powdered sugar and apple cider or apple juice in a small bowl until a thin glaze forms.
  7. Apply glaze and broil: Remove the fritters from the oven and turn the broiler on high. Brush a generous amount of glaze over each fritter allowing it to drip down the sides. Return the baking sheet to the oven and broil for 2-4 minutes, rotating every minute to ensure even caramelization. Watch closely to prevent burning.
  8. Final glaze and setting: Once broiled, brush the remaining glaze evenly over all fritters. Let them cool and set on the baking sheet for about 15 minutes until the glaze hardens to a shiny, caramelized finish.

Notes

  • Use Honeycrisp apples or any firm-tart apple variety for the best texture and flavor.
  • Watch the fritters carefully during broiling to prevent the glaze from burning.
  • For a softer glaze, reduce the broiling time or skip the broiler step and simply brush with glaze and let set.
  • These fritters taste best fresh but can be stored in an airtight container for up to 2 days.
  • To reheat, warm gently in a low oven to maintain crispness without melting the glaze.
