Ingredients

For the Cookies:

1 cup unsalted butter, softened

3/4 cup packed brown sugar

1/4 cup granulated sugar

1/2 cup apple butter

1 large egg

2 teaspoons vanilla extract

2 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon cream of tartar

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

For the Cinnamon Sugar Coating:

1/4 cup granulated sugar

1 tablespoon ground cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add the apple butter, egg, and vanilla extract, and mix until smooth and fully combined.
  4. In a separate bowl, whisk together the flour, baking soda, cream of tartar, cinnamon, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
  5. Chill the dough in the refrigerator for 30 minutes to make it easier to roll.
  6. In a small bowl, combine the granulated sugar and cinnamon for the coating.
  7. Scoop out tablespoon-sized portions of dough and roll them into balls. Roll each dough ball in the cinnamon-sugar mixture, coating it evenly.
  8. Place the coated dough balls onto the prepared baking sheet, leaving about 2 inches between each one.
  9. Bake for 10-12 minutes or until the edges are golden and the centers are set. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Add a handful of chopped walnuts or pecans to the dough for a bit of crunch.
