Amogio Sauce is a fresh and vibrant Mediterranean sauce, often used in Italian and Greek cuisine. Packed with garlic, lemon, olive oil, and herbs, it works wonderfully as a marinade, dipping sauce, or salad dressing. Its versatility and burst of flavor elevate meats, seafood, vegetables, and more.

Ingredients

1/2 cup extra virgin olive oil

1/4 cup fresh lemon juice (about 1 lemon)

34 cloves garlic, finely minced or crushed

1 teaspoon dried oregano (or 1 tablespoon fresh oregano, chopped)

1 teaspoon Dijon mustard (optional, for extra tang)

1/2 teaspoon salt (or more to taste)

1/4 teaspoon black pepper

1 tablespoon fresh parsley (optional, for garnish)

Instructions

  1. Prepare the ingredients: Mince or crush the garlic cloves and chop the fresh oregano (if using).
  2. Combine the ingredients: In a bowl, whisk together olive oil, lemon juice, garlic, oregano, Dijon mustard (if using), salt, and pepper. Mix well to combine all the flavors.
  3. Taste and adjust: Taste the sauce and adjust the seasoning. Add more lemon juice for extra tang or more garlic for a punch of flavor.
  4. Serve: Use the Amogio Sauce as a marinade, dipping sauce for bread or vegetables, or drizzle it over salads for added flavor.
  5. Optional garnish: Garnish with fresh chopped parsley for added color and flavor.

Notes
