Tender, buttery Amish-style sugar cookies with crisp edges and a soft center—delicately sweet, easy to shape, and perfect for any occasion.

Ingredients

2 ¾ cups all-purpose flour

½ tsp baking powder

½ tsp salt

1 cup unsalted butter, softened

1 ½ cups granulated sugar (plus extra for rolling)

1 egg

2 tsp vanilla extract

Optional: 1 tsp almond extract

Instructions

  1. In a bowl, whisk together flour, baking powder, and salt.
  2. Beat butter and sugar in another bowl until light and fluffy.
  3. Mix in egg, vanilla, and almond extract (if using) until combined.
  4. Gradually add the dry ingredients until a soft dough forms.
  5. Divide, wrap, and chill dough for at least 1 hour.
  6. Preheat oven to 350 °F. Roll chilled dough to ⅛″ thickness, then roll in granulated sugar.
  7. Cut into shapes and place 1″ apart on parchment-lined sheets.
  8. Bake for 8–10 minutes until edges are just golden.
  9. Let cookies rest 1 minute on the sheet, then transfer to a rack to cool completely.

Notes

Chilling is optional but helps prevent spreading and makes cutting easier.

Add lemon or orange zest, or spices like cinnamon for flavor variations.

Roll dough in sanding sugar for sparkle before baking.

Freeze unbaked cut shapes on trays, then store in bags for future baking.

Frost cooled cookies with glaze or dip in chocolate for festive treats.
