Alice Springs Chicken is a flavorful dish featuring juicy chicken breasts topped with a rich honey mustard sauce and melted cheese. It’s easy to make and perfect for family dinners or special occasions.

Ingredients

4 boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 cup shredded Monterey Jack cheese

1 cup shredded cheddar cheese

1/2 cup honey mustard dressing (store-bought or homemade)

1 tablespoon Dijon mustard (optional, for extra tang)

Instructions

  1. Prepare the Chicken: Preheat the oven to 375°F (190°C). Mix paprika, garlic powder, onion powder, salt, and pepper in a small bowl. Rub this mixture evenly over both sides of the chicken breasts. Heat olive oil in a large skillet over medium-high heat and sear the chicken breasts for 4-5 minutes per side, until golden brown. Remove from skillet and set aside.
  2. Prepare the Honey Mustard Sauce: In a small bowl, mix honey mustard dressing with Dijon mustard (if using) until smooth.
  3. Assemble the Chicken: Place the seared chicken breasts in a baking dish. Drizzle the honey mustard sauce generously over each chicken breast, then top with shredded Monterey Jack and cheddar cheeses.
  4. Bake the Chicken: Bake the chicken in the preheated oven for 20-25 minutes, until the chicken reaches an internal temperature of 165°F (74°C) and the cheese is melted and bubbly.
  5. Serve: Let the chicken rest for a few minutes before serving. Serve with mashed potatoes, steamed vegetables, or a crisp salad.

Notes

For extra flavor, add sautéed mushrooms on top before baking.
