Ingredients

Shrimp Marinade

  • 450g / 1lb shrimp (peeled and deveined)
  • 1 tbsp light soy sauce
  • 1 tbsp cornstarch

Sauce and Cooking

  • 2 tbsp vegetable oil
  • 3-4 cloves garlic, minced
  • 1 tbsp ginger paste (or grated ginger)
  • 4 tbsp honey
  • 1/4 tsp chilli flakes (optional)

Garnish

  • 2 green onions, sliced

Instructions

  1. Velvet the Shrimp: In a medium bowl, combine the light soy sauce and cornstarch. Add the peeled and deveined shrimp and toss thoroughly to coat. This velveting technique helps keep the shrimp tender and moist during cooking. Set the shrimp mixture aside until ready to cook.
  2. Cook Aromatics: Heat the vegetable oil in a non-stick frying pan over medium heat. Add the minced garlic and ginger paste, cooking for no longer than 30 seconds until fragrant but not browned.
  3. Cook the Shrimp: Add the marinated shrimp to the pan. Cook for 1-2 minutes on each side, turning carefully depending on the size of the shrimp, until they turn pink and opaque.
  4. Add Sauce and Finish: Pour the honey into the pan along with chili flakes if using. Toss the shrimp gently to coat them evenly with the sticky, flavorful sauce. Remove the pan from the heat promptly to avoid burning the honey.
  5. Garnish and Serve: Sprinkle the sliced green onions over the shrimp for a fresh, mild onion flavor and vibrant color. Serve immediately over steamed rice or use as an appetizer.
